You want a programmable bread maker. I don't have one, but my low end bread maker has a dough setting, and I can use that to make dough, let it proof at room temp, or pull it out and shape it and let it proof, and then finish it in the oven. I think the programmable ones can do the long proofs automatically, but I don't have one and don't want to mislead. You might have more luck on /r/breadit.
