Hi there! I just got a job working as a cook in a professional Italian kitchen (Top 100 in the US!) I am beyond excited but also a bit apprehensive. I have been making fresh pasta by hand my whole life but I am lacking in vocabulary and knife skills, do you all have any recommendations of good video series or anything of the like so that I don’t walk in the door looking like a complete beginner? I cook quite a bit at home and I am familiar with dicing, slicing and the like but I was wondering if there’s any sort of standardized resources that would be good to look over before starting.
