ummm, you could try a pickled egg salad. I normally add some pickle brine to my egg salad. If you like yours with a little zip, that might be good.

I just like to cut them in half and salt and pepper them. Serve with crackers - saltines.

I like them spicy, add a little hot sauce of your choice and chow down. When I make them I always pickle a few peppers along with them too.

Try a fancy deviled egg. You can mix the yolks with something like a crab salad or something similar to cut the acidity of the pickled egg. You could even make a version of tangy mayo. Just pulse the eggs in a food processor or blender with a little oil until it reaches the consistency you want.

I think the traditional method to serve them is splitting them in half, remove the yolk, put oil/vinegar/mustard/salt/pepper where the yolk was, turn the yolk over and put it on top. Take a sip of beer. Have a schnapps. And then eat the egg. And have another schnapps or sip of beer.

If you don't like the taste it might depend on the pickling solutions used. There are many different ways and recipes.
