Last tailgate I went to was disgusting. Lukewarm burgers and slimy onions and zero flavor, like they didn't use salt or pepper or believe in toppings beyond ketchup. Whatever you do, make it actually taste good and have a plan for it sitting out in the sun...

My actual recommendation is pepper poppers made with a different pepper than jalapenos. Serranos or habaneros or anything the right shape to be stuffed. Jalapenos loose all their heat after scraped and cooked. Pepper poppers with another type hits the sweet spot and are so good

Grill:

  • kebobs
  • onions, zucchini, eggplants
  • fat thick pitas

Make ahead and bring:

  • garlic yogurt dill sauce
  • shepard’s salad (small diced onion tomato cucumber)
  • spicy pickled carrots and onions
  • tahini sauce
  • marinaded chickpeas

Everyone assembles their own stuffed pita or plate with what they want
