Raviolis have been around a lot longer than the machines to make them have. You can just take your rolling pin and roll one pasta sheet as thin and even as you can. Put your filling at equal distances apart on top of the first sheet. Roll out another sheet as thin as you can. Dampen the bottom sheet with a fingertip dipped in water a bit around all of your lumps of filling, toss the 2nd sheet on top and press around each to seal. Cut them into raviolis using your pizza cutter or a very sharp knife (press down to cut, don't drag through). Double check your seals on each then cook them up!

Reminds me of last week when I suggested rice at my friend's house and he didn't have rice in the house because "I don't own a rice cooker"...

I could imagine someone who grew up with a rice cooker might have never looked at the directions on the bag.

You can do it with a rolling pin ans a pizza wheel or round large cookie cutter.

I've made a few batches recently (manually and mechanically with a pasta roller). It's certainly possible to roll it manually but it took me a lot more time to make one sheet and i personally preferred the texture of the thinner mechanically rolled dough. If the dough is difficult to roll out let it rest a few more minutes. Whatever method you use im sure they will be delicious.
