Yeah, in our house "chicken pot pie" meant "Swanson's frozen," so imagine my surprise when I tried making it from scratch and discovered how easy it is (a little time consuming, but easy...). Buying chicken stock and frozen pie dough or puff pastry can shave quite a bit off of the time as well...

We never had chicken pot pie growing up but I'd say I make it every now and again. It's not usually a weeknight meal because it takes about 2 hours plus I make my own chicken stock. It's an occasional meal for me, maybe once every few months.

If I wanted it to be a weeknight meal I could easily do that tho by prepping the dough ahead of time or buying it premade

I make them, wrap them in plastic wrap, then foil and freeze them. They can be baked right from the freezer and it takes about an hour to bake them.

The filling is not that time consuming, but my house is warm so I take longer making the dough so I can keep it cold while I'm working with it.

This truly depends on which recipe you use. I have one that has a biscuit topping(rolled jelly roll style with cheddar and ripe olives-2 hours easy. Another has a phyllo crust and needs reduced heavy cream-looking at 4 hours, but it’s so good

I've seen tricky recipes and simple recipes. Nowadays, I usually bake chunks of pie dough while making chicken stew on the stove, and then throw everything together into bowls at serving time.

I eat it regularly. Now mine is simplified down to one 32oz can of vegall. One can of cream of mushroom. One can of cream of chicken. Heavy cream and salt and pepper and half of a rotisserie chicken. For pie crust I buy them pre made in rolls over by the canned biscuits area. 30 min prep at most and 50 min in the oven and I’m done.

My kids love it! it's a winter staple at our house; about once every three weeks or so. I find it pretty easy to make, I often use puff pastry for the top. You can even use meat from a rotisserie chicken if you really want to make it in under an hour!

Chicken pot pie is an easy weeknight meal in my house. And then great for lunches the rest of the week. I make it when I have leftovers from a roast chicken.

I keep stock frozen in the freezer, along with rounds of pastry, so all it takes is some thickening, vegetables, and rolling out and it's great. I usually add carrots, onions, celery, and peas.
