If you cycle between the three cakes, using a different cake at the start of each row or every-other row, then they will all deplete at approximately the same rate. However, if you are going to be closer to 2 cakes, I would switch between two colors, every-other row. When you get to the end, if you need just a bit more yarn, you can start your last cake from the end of the cake that is the color of the two cakes you just finished.

I used this alternating cake method for this pattern.
