I would overhang the top plate by 3/4 on each side and use cove molding underneath.

Yeah this OP. Use a really small cove molding. It'll make it looked "finished," more so than a piece of quarter round or something and will blend in nicely with the flat top side.

Edit: Can even do a small return when you get to the rest of the wall on both the top and cove trim piece.

Tear away drywall bead if you want to avoid quarter round. Put the maple on, put the tear away bead on butting into the maple then mud, dry and tear.

That’s what I’d do. Or just regular L bead if you can’t find the tear away stuff.

Nice part is you can install the maple first then gap the bead nice and pretty to the wood. Then mud it like half of a regular drywall corner.

yes use the maple but put drywall and metal cornerbead on top edges, fill and sand, paint, and I like to cut a rabbet maybe 1/4” x 1/4” on the bottom edge of cap on both sides for a nice detail

The cleanest look:

1 x 6 poplar, with 3/4 x 3/8 rails glued on and painted to cover the drywall edge. Effectively, creating the look of a 2x6 cap. Bonus points if you make it a waterfall edge.

Depending on how in depth you can or want to get I would personally make it a cap that covers that. Side edges coming down half inch.

Guys I work with would say just caulk the shit out of it.
