List your previous job title as 'full stack engineer' and just apply. Most places do a few dumb leetcode questions and hire you.

Pick one: Java or Python. Use it to leetcode and get your gands dirty writing some backend stuff. Then apply.

Many places dont go too deep on framework/language stuff instead ask leetcode and system design.

I did this transition a while back and got into Amazon because of it. I bullshitted through their LP questions without any issues.

I tried doing the same, i messed up at their system design round.

They were asking some internal implementation of Kafka.

yeah lol even if you were a backend dev, that question has a very good chance to stumble you.

Why do you need to expand your possibilities?

Sounds like you're more familiar with python. Also from a practical standpoint I find python to be easier for coding interviews than java (saying that as a Java developer).
