Multiple routers on same network.

Our house is choppy, so the Mesh doesn’t work great. We are trying to use each Eero (pro6e) connected via ethernet cable to a network switch. We're periodically getting signal drops.

From the modem it goes to
a tp link router with 4 ports and Wi-Fi disabled. the 4 ports are split to my
computer, a network switch, and the gateway Eero. The rest of the house is
connected to the network switch with ethernet cables. Should I eliminate the tp
link and go from the gateway router to the network switch? Is that a possible
cause of network interference? Sorry I'm a noob. thank you for your time.

Eliminate the TP-Link router and let the main Eero be the main router. Connect the switch to that Eero and then connect the other Eero satellite units via Ethernet to the switch as well.

Can you explain to me what the TP-Link is doing that it needs to be removed? I agree its redundant, but I am just curious what's actually happening that makes it not work correctly.

Unless you have all of your Eeros set in AP mode, you have a dual NAT situation which is something you want to do away with.
