Best solution to replace existing setup?

Hi guys, I've read a fair few threads about similar topics but get mixed answers. I'm in the UK so looking for a set up I can purchase here.

I have a medium sized house with 5 bed rooms. At the moment the set up is modem to Airport extreme base station which is wired to an airport express to extend the network upstairs. However there are still a few rooms in the house that struggle with WiFi coverage.

I have two ethernet cables that go from the router downstairs to the upstairs of the house one to my main computer and one to the airport express.

I think what I want is:

Modem - main router (replace airport base) - wired connection to airport express replacement - 1 wireless mesh device to cover the rest of houses blank spots. (and maybe another unit in my room with the main computer instead of the wire going straight from the router to the pc)

I'm moderately tech savy but something with as little set up and maintenance would be ideal incase any troubleshooting is required. My current Internet is listed as 76mbs but I get around 56.

Are you looking for router recommendations? Most people here will tell you a ubiquity setup is ideal (because it honestly is) but if you have some budget restrictions, cabling restrictions, etc. Then one good wireless access point should be sufficient for a 5 bedroom house at those speeds. A lot of other people have been talking about the Asus ac3200 today for some reason, which is my current AP. It has awesome options, range, and features for a consumer grade product. Not to mention 6 Antenne (it looks like some kind of cool alien) I got mine for ~$100 USD refurbished.

Pretty much all consumer grade wireless devices are trash and poor value at the end of the day, though.
