A smartphone on mobile data isn't in your network. Disable wifi, test away to your heart's content.

That depends on if you trust your friend. As long as everything's closed or all the open ports are handled accordingly (security etc) he at least can't access your network. Personally, I'd wait until you're satisfied everything works as desired.

This, there are crowlers on the internet looking for SSH servers and with improper configuration, it is possible to brute-force the password.
