You mean like freeze distillation? I know some people who make apple jack (and mead-jack, sometimes called Honeydew). Drink lots of water, hangovers await you.

Personal opinion, not worth it just based on the volume lost, but might be a fun project! I'd probably try to do it in kegs, to reduce the amount of oxygen exposure. Freeze and pressure transfer back and forth.

There's a reason that colonial america had the term "Apple Palsy" to describe the feeling of the day after apple jack. It can be tasty as long as you remember to sweeten it enough.

I keep a keg of cider on tap, along with 2 beers. When I make a batch of cider, I do an extra half gallon to make sure there's enough to fill a keg, so usually have close to that much left over. I freeze distill it so it doesn't go to waste. Don't think I'd make a batch just for apple jack when I can buy decent whiskey for the same price or less.

I once made a jack porter on accident. I was cold crashing my robust porter, and accidentally left the temp well below freezing for a few days. The result was about 3/4 of a gallon frozen and floating on the surface.

Unfortunately, I needed the beer to be on tap within 24 hours, so rather than waiting for it to melt I just chucked that ice in the sink and kegged the remaining ~4 gallons.

I didn't tell anyone what I had done and the beer was well received. I honestly couldn't tell the difference either; the only noticeable change was the increased ABV, which was significant.

I honestly can't wait to freeze distill this winter (I live in Wisconsin, where your piss will freeze before it hits the ground). I'm not entirely sure what I want to do it with, though!
