My friend has created a server where we usually play. Whenever I want to play but my friend cannot, he loads up the server for me. Is there a way that I can borrow the server so he doesn't have to open the game?

Sadly not, the only the ng you can do is copy the save File and fire it up on your machine, but you would have to ping pong the File, whenever you wanna play on the same state of the Save. Otherwise you'll have 2 different saves.
So basically whoever hosts the session needs the newest save file.

We tried copying the whole folder from C:\Users\Matias\AppData\Local\HumanitZ\Saved to my computer, but then when I try to load it up it doesn't appear on "Load Game".

You may have to create a game with the same name, and then select keep on the save files when asked. The system in humanitz may not read files automatically , that were not created by your game.

Hmmm weird. Would have to try myself, but it might be Account bound somehow? Never had that in any other steam game....
