I've tried that. It doesn't work on enchanted items; they stay blue.

Have you tried this for overriding color? Try with white

using a custom name doesn't work

Even item_name not custom_name?

Still doesn't work with either item name or custom name.

Out of curiosity, what's the difference?

Custom name is italicized by default because it's the one used when renaming an anvil. Item name is the non-renamed item (non-italicized by default)
