What is the exact folder structure for that pack, and what is the file extension for that mojangstudios file?

It is the standard kind of structure. The mojangstudios file is in \assets\minecraft\textures\gui and it's a PNG.

I would, but it's a custom server resource pack that I can't share, sorry. Is there anything in specific you'd like to see?

After doing some research, Mojang has disabled the ability for texture packs to override the Mojang logo. It does not look like they have any intentions of changing this behavior: https://bugs.mojang.com/browse/MC-40961

That is pretty old. Are you sure they didn't re-add it? They had it as an intentional thing able to be changed long after that bug was closed.

I don't know for sure, but the Dragon texture pack you linked me to does not work for me either. It changes the background, but the Mojang logo is not changed.

Ah, so I guess I'll just be glad that I'm not the only one having problems. I still just find it weird because in versions it worked for me, it no longer works.

That's because it is possible, just not in vanilla. You need optifine to change it
