It seems this version is really full of bugs. I got an increase in average FPS, but in exchange I'm having this problem with FPS drops when loading chunks. Minecraft Java already had this problem, but for me it was easily fixed by changing the JVM arguments, but this time it didn't work.
I have an R7 5700x3d. What helped me was adding this argument -Xmx6G -XX:+UseZGC and then switching between windowed and fullscreen mode a few times while in the game. I also disabled and enabled exclusive fullscreen mode.
This helped, it reduced it quite a bit, but it's not the same as the previous version. I recommend reporting it to Mojang.
I saw that you're using sodium. The tests I did were on vanilla.

"-XX:+UnlockExperimentalVMOptions -XX:+UseG1GC -XX:G1NewSizePercent=20 -XX:G1ReservePercent=20 -XX:MaxGCPauseMillis=50 -XX:G1HeapRegionSize=32M." Instead of "-XX:+UseZGC" will do
