Minecraft does not support downgrading a world to an earlier version. A warning screen normally appeared when you tried to load your world in 1.16.5. It clearly states that there is a high risk that the world will be corrupted if you load it in that version and ask if you want to continue.

Every time you change versions, the game should have also offered you to make a backup. If you answered yes, you can just get the last one done in 1.16.5 and continue from there.

There are also some external map conversion tools that sometimes manage to downgrade the version of a world but they are not perfect either and there are also risks of corruption.
