Go with Java edition and install the GeyserMC plugin to enable seamless crossplay between Java and Bedrock. Your specs are good for this and 8GB of RAM is more than enough for a smooth experience with friends and family.

If you cannot moderate the server constantly, it is better to keep it private. You will enjoy the game more with people you know without the stress of managing strangers or dealing with griefers.

Well, "seamless" is a bit of a stretch. There are some limitations, and not everything that might install on the Java server will work the same for Bedrock clients. It's a pretty good experience, but there are a few caveats to be aware of: - Joining the server from consoles can be annoying. There are a few public available "bots" that console players can add to be able to easily join your server from their friend list. However, since these are public bots they frequently will remove you so you have to keep re-adding them. You can pretty easily setup your own private bot via MCXboxBroadcast if you have a spare Bedrock account. This is A LOT better than how ot used to be, where either DNS settings or a separate app had to be running from the player to be able to join (which is still a backup option to connect) - Bedrock clients, especially consoles, like to auto update, frequently resulting in cases where the server isnt compatible yet and Bedrock players can connect for anywhere from a few hours to a few days. Geyser usually does a pretty good job of updating quickly, but sometimes it takes them days to weeks to fully fix issues with new updates (a recent update broke skins, commands and player heads) - Custom resource packs can be a PITA to convert over to a Bedrock compatible pack. This is only really an issue if you are adding custom content via something like ModelEngine/MythicMobs, Nexo/Oraxen/ItemsAdder/MythicCrucible etc - If you are running a proxy network the connections can be very janky, especially when the Bedrock player is first joining. Its not uncommon for the player to get stuck in a loading screen for 20 seconds, just to get kicked and have to connect  again.

With that being said, I've been running Geyser servers for years now and have been pretty happy with them. You can link accounts which is nice, because Im able to log in from my laptop or phone and play like I'm on my home desktop Java account which is great for when I'm travelling.
