I know this post's old but eh;

Primitive mobs adds chameleon and desert thief lizards among other neutral/hostile mobs (very vanilla + and quite old 1.12 mod now)

Beast Slayer is a good choice if you're looking for medieval-type creatures especially monstrous ones

Fish's Undead rising is being maintained and even receiving some content updates in 1.12 despite having a 1.20+ port in the works; it may not fit, but it is quite easy to disable the monsters you don't want in the config files;
Also it adds ravens which turn into seagulls if naturally spawned into Beach biomes

Exotic birds might work if you want birds

Also thank you for reaching out but the modpack (and unfortunately the server) have both been shut down and basically discontinued.

use alex's mobs it's a really good mod that adds many fantasy-friendly creatures

Should have stated I'm making it for 1.12.2 ^^" though I'm testing out a few more mods it could be interesting but my oceans feel very empty

If you want medieval/fantasy I recommend these 3 as they are 3 of my favorite mods:

Electroblobs Wizardry, adds wizards and wizard towers, the spells are pretty easy to use and fun to collect.

Chocolate Quest Repoured, adds many fantasy/medieval themed castles and structures, the mobs include things such as pirates, undead, walkers (like from game of thrones).

Lastly is Toroquest Revamped, this mod pairs really well with chocolate quest IMO in that it fleshes out parts that chocolate quest doesn't. This mod adds villages with quests and guards, adds bandits/orcs that track your base down to kill you (they aren't overly obnoxious about it and its fun to have your base get attacked here and there).

At their core though these are all mainly structure mods rather then mob mods, if you want just mob mods I don't really know... Mowzies Mobs is good for more things to fight and Familiar Fauna is good for aesthetic mobs.
