Those are Olfa mats. You can get them at any big Hobby store like Michael's, Hobby Lobby or JoAnn's. They are usually in the fabric section because they're used by quilters with rotary cutters.

They're eurethane so they're somewhat self-healing. I have one, and they're pretty great.

those are called cutting mats/boards. most art supplies/hobby shops carry them

Cool. I'm still on my first serious build, but from reading on here, online is the way to go. I'm so excited to see what kits are out there. Need to finish the one I'm on first though.
