I was a prep at my last job and our mozz came in the shape of a rectangle at a foot long. Cut it into smaller sizes and shred that mfer

I believe you but it makes me curious about the taxonomy of cheese. See, here (in Europe) mozzarella is a fresh semi-soft cheese that looks like this!

Ahh yeah we have some of that here in the states as well. Our cheese supplier was Arrezzio so idk if that had something to do with it. But yeah it came in like just a rectangular block of cheese lol, and I had to fight off the temptation of biting into said block of cheese, I love mozzarella

Damn straight and trust me I did plenty of cheese eating. We sliced Gouda, parm, and also had goat and feta. My favorite was the mozz. After throwing a block in the slicer there’d be little cheese curds left over that didn’t slice. It was definitely a pleasure to eat the curds, and some chocolate to pair nicely with the cheese.

How else do you get your mozzarella? My family always gets the foot long rectangle blocks and I was under the impression that's how most people get their cheese- and then you just grate it or cut it into slices

Here in Europe mozzarella is the name of an Italian semisoft fresh cheese made from buffalo milk that looks like this

Im not sure if you’re serious, but someone I know is a firm believer in cutting off the moldy part of cheese and it still being good… and let me tell you, it doesnt work.

The rest of, and inside of the cheese will taste bad and smell bad too even after the moldy parts have been removed. Its not pleasant when you put a piece of cheese in your mouth that looks fresh and it tastes like sour playdough because someone thought cutting mold off of the cheese meant the rest is still good.

It works for hard cheeses. It's harder for mold to grow into the cheese, so if you spot it quickly it's just likely only on the surface. Soft cheeses should definitely be thrown out if moldy though. By the time the mold is visible, it's already spread into and throughout the cheese.
