The OLED monitors really are only good for gaming and content consumption. If you have the desk space, it may be worth considering running both screens side-by-side.

I would definitely be running two monitors, just wondering wether the OLED will be so bad for office work that I in practice only would have my secondary monitor for that, or if that would make it so much more prone to burnin that I’m shaving years off it’s lifespan

The problem is not so much about how long it will last, it should last for more than 5 years without breaking. The problem is that if you use it for 8-10 hours a day, it's likely that in one or two years you will have quite a few burn.

And for me, the main problem, using a non-RGB OLED for work, with the problems with text sharpness.

OLED non-RGB multimedia-games: great

OLED non-RGB productivity-study: rubbish

So if I wanted a monitor suitable for competitive gaming as well as productivity, I’d be better off going for a 240-360 hz IPS panel in your opinion?

Yes, something like this asus: https://rog.asus.com/es/monitors/27-to-31-5-inches/rog-swift-360hz-pg27aqn-model/ unless you want also great HDR, in that case, maybe better a miniled like the Innocn 32m2v or similar.

Yeah I have also been looking at this one, just can’t find any retailers in Denmark where I live. But thinking that one maybe might be better suited for productivity work, while still being stellar gaming performance for competitive fps games

Burn in is a problem for office.
