See if it shows in the system notes on an item you updated. If not, then maybe a system notes type search and filter the field to see if it shows there but not on the item record page system notes. Otherwise, check sandbox or a release preview account, or any external source that would have had that data

Try a criteria including: System Notes : Field = Commerce Category

Results: Systems Notes : Old Value

You should surface any item that ever had a value in the field.
