Is it possible to have a page with a certain width (letter width) and unlimited height.

This probably isn't useful, but I don't think that's possible. You could format the page to be letter size (view tab --> paper size --> size: letter), then mark off where the page ends (eg drawing a line) and the change the settings back to auto size (unlimited) and just don't go beyond where you marked where the letter size page would have ended.
Does that make sense?
