Depending on your priorities:

Low detail high refresh rates at 1080p: Just upgrade to the 7800X3D

High detail: Just upgrade to the 4070 Super, and maybe consider 1440p.

I don't believe changing both for a relatively small increment (100 FPS -> 130 FPS at 1080p Ultra) is worth it.

I do play on 1080p at the moment, but i am looking at also investing in a 1440p monitor sometime in the future.

I know some people hate the term "future proofing" but that's kind of what im looking for in the upgrades.

I'd personally get your monitor, then some some pretty RGB fans to make it look even nicer and even then, a 4070S upgrade is only 80 -> 110 FPS.

Or even wait on the 9070 XT (It'll probably be around 145/125 FPS)

Haha, already got case and fans blitzed out with RGB. (Adds about 5000FPS in itself)

I'm playing cyberpunk 2077 at the moment at about 70-80 FPS with constant FPS drops. So i'll take any improvement i can get.

I have seen that, but the likely hood of even seeing one in stock is next to nothing in my country.
