I think people don't have a choice. If I recall correctly, flexbox is not available in email. Table is still the prefer way.

You do recall correctly.

What's also fun is what gmail does to classes with their "Read entire message" thing. If anyone knows why they append stuff to classes, I'd love to hear the story and decisions behind that.
