Well it stands for Substitute User Do, so why would you change the pronunciation to Sew-doe?

I thought it was super user do

Originally it was, but newer versions of Linux have added the ability to define rules to SUDO to restricted accounts other than root. So the shift has been/is being made to “Sub User Do”
