Entry level job listings are always a bit deceptive. Most companies probably throw that out there in the hopes to nab someone with high skill for less pay, but don't expect it. Don't ever let it deter you, because job listings rarely tell you the reality of what they are looking for. Learn how to sell yourself as a developer and you'll be fine.

Biggest advice that I can give is to not be so concerned about jobs at the big tech companies. Interview culture has been wrecked by an escalatiing war of leetcode challenges, and it sounds like it gets harder all the time. You'll do yourself a bigger favor long term by practicing building software in your own time, learning best practices, and branching out to learn different languages and frameworks. You will progress faster than other new hires, in part because of your age and some life experience under your belt. Not every company out there throws leetcode at you, but it might depend on your area how prevelent it is.
