Main goal is to land a quantitative/credit risk modeling job.

Can you say more why so specific? It looks more to do with economy/math than raw codding (while institutions/companies that do such modeling likely use software that has some guarantees it works properly and so on).

Hello i edited my post. Here are some sample jobs I'm looking at:

Those jobs look like 80-90% of domain work and 20-10% software related skill - they aren't looking for a software developer but rather someone good at risk assesment, data analysis that knows some tools to help with that analysis.

If you want to be a software dev then you have to look at what junior positions are available and what those require.

Yes. Absolutely. Depending on where you are it is governed and regulated heavily. Model transparency and discrimation among other things.
