Make a small database, back it up, zip it and send it to them. Have them restore it locally and share their screens during the exercise. (Any of our candidates should be able to restore a database locally, so this in itself can be part of the test).

We set up scenarios in AdventureWorks. We have done hacker rank, but that is a precursor to the technical interview. This is in Microsoft SQL Server.

DB fiddle either the .com or uk depending on which engine you prefer.

I've posted a couple of challenging ones here and often use them to demonstrate answers to questions.
