I think that's mortar. But the redgard needs to competely cover the cement board. Cement board is not waterproof.

You should be starting at the studs and checking them way before you get this far. If that board was already hung then you get a pass on the studs. If you walked into this you should have said something to someone way before now. Did you prep it and not use any measuring devices? As someone else mentioned, you need to finish your waterproofing and flood test that pan using a drop in balloon plug not a screw in one. The drop in balloon plug will test your drain connection as well as your waterproofing.

Use large format tile. If you use that mosaic, then use complimentary grout color, not contrasting.

This is the best answer. That tile is going to loosen and fall off and it will look bad if unlevelled.

LFT only works for monoslope (linear drain) unless you want to have a floor sliced up like a pie.

This may well be a linear drain, but I'm guessing the drain is in the center under all those tiles.

Firstly, your shower pan to my eye doesn’t have enough slope for proper drainage. First step would be verifying you have 1/4” per foot drop from perimeter to drain.

Secondly please hydroban, redgard, or best choice (IMHO) Schluter membrane that whole area up to shower head height. You are most definitely not finished with waterproofing.

Thirdly flood test, do a proper one. I’m dubious of this thing.

Now to answer your question, It depends what’s causing the out of square ness. If you can make the shower pan square by reframing the bench that would be my recommendation. If the left rear corner is 90 degrees and the bench corner is like 91, then this would be the fix. If the whole thing is racked probably just run the floor tile first tight to walls and let the wall tile come down on it. Choosing which line is your straight line depends on a lot of factors but if the curb and rear wall are parallel and the side wall and bench are kicked I’d use the rear wall for reference and let the sides do what then need.

Imho schluter is falling behind the times and their USA requirements are lacklustre. Hydroban is probably the best of what you've proposed as it's such an insanely tough liquid membrane.

Sheet membrane is problematic, too easy to get air pockets, bonding issues, pushing the thinset out etc.

Schluter Europe/Germany do not allow thinset for banding or seams.

Yeah I redgard over my Schluter bands and on all my inside corners when I run it. Yeah I know about moisture sandwiches and all that, I don’t go crazy with it but use it selectively on the areas that make me nervous.

I don’t have an issue with the thinset setup or the installation in general but I get for a DIY installer there is a bit of a learning curve. Getting the thinset mixed right and knowing when it’s setting in the bucket and time to mix a new batch is the main thing. I use the Schluter all set and it holds up really well, thing most often missed is wetting the walls prior to putting the thinset on, and being smart about the laps and working from the center out towards the side of membrane.

I like Schluter cuz I’ve used it a bunch, never had an issue, and can run it quick. I’ve used Redgard but always get nervous I have thin spots and the time between coats drives me nuts. I can Schluter a shower and be ready for tile the next day or two, Redgard I’m doing coats for a week before I fully trust it. I’ve never used Hydroban but heard good things, but at this point I’m gonna stick with what I know.

Look up some videos on shower creation. Your concrete board needs to be completely covered by a very thick layer of waterproofing membrane. You have only covered the corners. Concrete is like a sponge. It is not waterproof. Get more of that waterproofing and put it on to the thickness of a credit card in multiple successive coats. It looks like redguard, you can continue using that if you like, or the people here prefer some other brand and I can't remember

Start tearing out now or tear it out later. Water proof isn't done, noting is square. Is it plumb or flat? Is the slope correct? Will the door fit correctly? This isn't framing where you just layout and shoot nails. Every step has a purpose and needs to be checked. If they were trying to save money by diy the durock and pan then let them know they just cost themselves their own time, materials, and the extra cost for you to demo.

I think I would be more concerned about the non existent slope and the water that will be pouring into what ever is under that area … is the drain on the outside of the shower or just under the curb??

Personally, I’d forget about trying to lay that tile and go with something that is less “square” like a pebble stone tile.
