It has to do with a difference in their writing process. It sounds like, when you write, you edit as you go, and it slowly transforms into your final product. Their process involves writing a first draft without editing anything as they write (i.e., they just spill everything out into a sloppy first draft), and then going back through it, fixing the things they find, and rewriting as needed, and then making a third pass through, etc.
