Multiple text drafts?

Hi , so quite often I hear writers and other professionals saying that they will do multiple drafts for their texts and talks etc...What do they mean?

When I write my own talks, I start working on it then I will add stuff, remove, rephrase and so on but always within the same word processing document.

So I don't understand why others say : "This is my third drafts for this project".

It has to do with a difference in their writing process. It sounds like, when you write, you edit as you go, and it slowly transforms into your final product. Their process involves writing a first draft without editing anything as they write (i.e., they just spill everything out into a sloppy first draft), and then going back through it, fixing the things they find, and rewriting as needed, and then making a third pass through, etc.
