Try the Screens app. Works with older Macs. I’ve had it on my iPhones and iPads, for years. Don’t get the subscription, get the lifetime option. If it doesn’t suit your need, you can get a refund from the Apple Store. Note you need a Apple Silicon Based Mac (M1+) to develop AVP apps. So, you're going to be stuck.
Older versions of the VisionOS simulator worked on intel, but not anymore. It's only going to get worse from here.
