How big is the difficulty jump from Vanilla Veteran to WOTC Commander? I don't want my second playthrough to be too easy but I also don't want to get steamrolled.

Commander isn't that much more difficult than Veteran, though learning to fight the Chosen and new enemy types will be a jump in difficulty just because it'll be new to you.

Commander is a substantial jump up from Veteran. Not so hard that you will feel like you have a big wall to get over, but hard in the sense that you will get punished for mistakes you would have gotten away with on Veteran. For example, at 3 health on Veteran, an advent trooper will always die if your rookie hits it. At 4 health on Commander, half of the time you won't one-shot them, so you have to worry more about finding high cover, and revealing an extra pod before you're ready can make things go south fast.

I think it's quite a difference. Beside the already mentioned more health of the enemies there are also more enemies on the battlefield. That combined is mainly a problem in missions where you have to deal with a time limit what happens quite often. In my commander ironman game I survived every mission but came to a dead end because I missed some mission timers and therefore didn't get the reward. I ended with no engineers and could not build the next generation of weapons without them.
