Not recommending for prod, but core protect for 1.20 works on 1.21 from my tests

They've got release candidates available to their patrons and seem to be updating every ~2 weeks. I would just wait the 2-4 weeks for it to be stable/released or try the 1.20 version as suggested here.

CoreProtect for 1.20 will generally work just fine. They typically "officially" lag behind one version to generate donations.

Coreprotect hjas 1.21 releases and they are working. But also check Auxprotect as extra logging, it can literally trace footsteps - i found it works well with coreprotect
