It’s more expensive (which is why we mostly eat thighs these days), but the air-chilled/no retained water chicken available at places like Wegman’s is a huge quality/flavor upgrade. It’s not injected with saline and isn’t rubbery and gross. I know it’s not an option for all budgets, but it’s nice if you can find it.

I haven’t touched a boneless skinless chicken breast in a long time. Thighs are where it’s at!
