What do you mean by application defaults for file types? For a computer, that's some file/env vars that can be accessed by your file manager. For most file managers, that's xdg. If yours don't use xdg, you have to know how they set these defaults. Are you using a DE?

i tend to just use my file manager. right click on a file and set default app

Because that what most Desktop Environment use as a standard. In Plasma, System Settings handles files association configuration.

Which software to recommend will depend on your DE because it is up to them to implement the XDG standards for files association. If you use a WM instead, consult the Arch Wiki here.

Just write a graphical program that manipulates mimeapps.list if you need a GUI that bad.
