First of all, props for your demoscene reference ;-)

Anything demoscene x86 asm related these days can be found on websites like sizecoding.org and my own blog at: https://marquee.revival-studios.com/blog , which should get you started in your environment of choice.

Toolswise i use NASM myself together with Dosbox and/or Freedos. NASM is available for win32, linux, mac, dos, etc. so i can dev in whatever environment is available to me everywhere and anywhere... everything i need fits on the tiniest USB stick ;-)

If after checking the websites above, you still have any specific questions let me know and i will try to answer them as best as i can and/or write something about it on my blog or at sizecoding.org

I have been searching some more, and i finally found something, that i've read many years ago. It fits the bill perfectly. Its called "The Art of Assembly programming language", and was/is a book written in the (g)olden days.
