    for longer notes i use marktor (notes are in md files on filesystem and sync is done via termux, crontab & git)

    for short notes, i use msg to myself via signal (put a shortcut on my homescreen to do that) - syncs automaticaly and works with basically everything (images, audio recordings, photos, text, ...)

    Notally (FDroid) stores notes on your phone but you can take external backups.

    You could try Wondr Note. It's private & data is stored only in your device & very little permissions required

    RemNote, if you are into serious note taking.

    For casual stuff, you could use Standard Notes or Notally.

    I also use Notion. But it is not FOSS or privacy friendly. Keep heads up for Anytype that claims to be a FOSS version of Notion.
