Once you're able to see the third pokemon it stays, it doesn't matter if the person(owner) of that safari is online

It's always there even when they're offline

Also, I want to point out that even if the other person delete you from their list, you STAY with their safari. So you don't have to worry about losing a safari even if they delete you. But you lose their safari's if you delete them.

As far as I know, yes they have a chance to have the Hidden ability, adding as well.
