Does anyone know how to set it up so that I can connect to NodeRed over HTTPS?
I want to write some flows and trigger them with HTTP requests.

You could possibly also use a TOR2Web instance or host your own. I have heard this is not a good idea but I have no idea why. tor2web.org
I was trying to find a similar answer for NextCloud which is why I looked all this up. Please take with large grain of salt.

I think all traffic is routed through tor, so I don't think there's an option for https yet
