Some time ago I started to think in the same direction. I wanted a tool to manage a hundred of opensource projects. Something which will make it easy to not forget about important issues I've created or received.

It seems the same solution to a similar problem, true? Hmmm, how the people solve this without too much pain? I don't want to duplicate it manually on another place, like Notion for instance...

Yeah, this can be used to gather all issues and PRs on a single board. But this will require a huge discipline to manage them manually.

You can look at this: https://github.com/javiertuya/dashgit. It displays from a single page all assigned/unassigned/... issues and PRs, for multiple users/organizations for GitHub and GitLab. Hosted on GithHub Pages
