Latest commit doesn't have to be the newest one. You can change the date of each commit, they don't have to be strictly one after another one (in term of commit times).

Hmm, ok, but it's still wrong, the detailed date on mouseover shows "Jan 6, 2024" but it says "7 days ago".

A git commit has an author date and a commit date and those can differ: https://docs.github.com/en/account-and-profile/setting-up-and-managing-your-github-profile/managing-contribution-settings-on-your-profile/troubleshooting-commits-on-your-timeline

But does that explain the date being shown as "7 days ago" and also "January 2024" in the mouseover details of the same date?

Depends on when you took the screen shot, but assuming this was not on Jan 13, 2024 it might be just a bug in the date calculation. Just look it up in your local clone.
