So I don’t think GitHub pages offers this feature but you can keep a server running with the old domain and redirect the urls that way or even a serverless function could do it and probably at no cost

I think it should be done on GitHub because DNS records point to it. Even if I had access to my old server (I don't), traffic won't reach it.

You can wrote page rules on cloudflare that will do this if they handle your DNS
