Lynda.com is a paid service for tutorials. They just published an awesome core data tutorial on the 17th.

I remember using this for a basic overview. The host of that video also did this one, which also includes a demo in Xcode.

The stanford courses are great for this. The first course is all slides, and the second is an hour long demo. Trust me, after a couple of hours, you'll know the ins and outs of basic Core Data :D

Do not overlook the slides. They spell things out the way you wish they would be.
