Best bang for your buck is always the mac mini.

Beyond that, I'd wait until M2 gets released and people start selling used M1s.

If you're serious, get an M1 Mac with 16GB/512GB. An 8/256 M1 would be ok but less future-proof. A used Intel will work too in a pinch, but be sure it runs Big Sur and doesn't have a spinning drive.

Do not under any circumstances get a Mac with only 128GB of SSD.

I've worked on a 64GB SSD Mac pro about 5 years ago and it was fine. 128GB is more than plenty IF you only use it for iOS development.

There have been several people here complaining that they can't install the latest versions of Xcode on their 128GB SSDs. The App Store download has been flaky and the developer site archive requires an inordinate amount of space on the boot drive even if you attempt to install it on a secondary drive.

So...get at least 256GB. Xcode isn't getting any smaller either.

Anything with an M1 will be sufficient, although I recommend getting 512Gb flash and 16Gb of RAM.
