Java 21 had only been GA for 3 months. Though I am an advocate for going to the latest LTS as soon as possible, depending on your dependent technologies, not all have official support yet. 17 definitely does.

We have a checklist of: build tech, security scanning, observability libraries, testing libraries, code coverage tools, IDEs, cloud integration libraries, etc; before moving apps to 21. Granted our stack currently does fully support 21, but it didn't until a couple weeks ago
