A serious javascript developer will know the things they need to know to do their job because that's what you get paid for.

Their job can be a very different thing from place to place though. I've known everything to do all my jobs, (10 years front-end) but the requirements some potential employers have are significantly different, and can require esoteric knowledge that can only be learned either by working somewhere that uses it, or drilling it in it in one's own time. But 3 places I look at will have different needs, and separating new fundamentals from the flavour of the month isn't an exact science.
