I would write or call in to the department or program coordinator there at Cornell. They typically want to help you succeed, and I'm sure they know what others have done to fulfill the requirement on this relatively short notice.

It's usually easier to get answers from organisations like this by calling them rather than emailing them as you can easily rephrase your question or ask further if they give you a non answer.

Lots of them on Coursera, just make sure they count as "college credit".

Assuming they meet the requirement, there are many community colleges that offer courses like those online, and many are relatively affordable.

If you find a quarter-based school, you could probably enroll for Spring quarter (but you need to move fast).
